Grilled Chicken & Avocado Bowl with Hot Honey Aioli

Ingredients

  • Chicken thigh fillet (if possible with skin on)
  • Rice
  • Avocado, sliced
  • Cucumber, finely sliced
  • Oyster mushrooms, sliced
  • Sproutje Hot Honey Aioli
  • Sproutje Original Umami Crunch
  • Vegetable oil

 Instructions:

  1. Rice:

    • Cook as per packet instructions.
  2. Chicken

    • Heat pan over high heat, add in oil and heat for 10 seconds. Add in chicken (skin side down).
    • Fry for 3 - 5 mins till skin is lightly browned, turn heat to medium and flip to cook other side. Cook for another 3-4 mins or until fully cooked. 
    • Remove from pan and rest. 
  3. Oyster mushrooms:

    • Add to same pan as chicken and reduce heat to low-med. Cook till lightly browned. Season with salt. 
  4. Salted cucumber:

    • Sprinkle with 2 tsp salt and toss. Leave to rest for 5 mins. Squeeze cucumber with hands to release water. Set aside.
  5. Plating:

    • Distribute rice across 4x plates. 
    • Slice chicken and place over rice, then add mushrooms, salted cucumber and avocado slices. 
    • Drizzle Hot Honey Aioli over chicken and sprinkle with Original Umami Crunch.
